We are now officially in the countdown to market season.
All winter we review and plan our gardens. We make sure we have all of the produce that our members love the most. We ensure we have a good progression and variety. Our timings are planned to allow us to make the most of the garden space that we have available.
Then Spring arrives. We hold our breath. We hope that mother nature helps us to meet the goals we have set.
So far this year, we are mostly on track. New little plants are popping up at regular intervals. Each time we walk through the garden, we find something new and wonderful to add to our offerings.
This week, as we walked down the rows, we spotted tiny little bright red gems poking up through the soil. We were delighted to taste crisp baby radishes. These little cuties grow fast and should be ready for salads by next week’s delivery date.


Our spinach has also reached a good size for a first harvest. It would be totally awesome in a salad with some hard boiled quail eggs, quick pickled onions and bacon vinaigrette. My mouth is watering just thinking about it!
To make bacon vinaigrette, replace 1/4-1/3 of the oil in last week’s versatile vinaigrette recipe with bacon fat. Warm it gently on the stove to melt it. Let it cool slightly then mix in the rest of your ingredients. I often use maple syrup as the flavouring element in bacon vinaigrette. While it is still warm, add some dried cranberries and finely sliced onions. They gently marinade while everything else is prepped (spinach, bacon bits, boiled eggs, any delicious veg you have on hand). Then toss everything together or layer it for a “shake and serve” lunchbox salad.
